Ingredients:

  • 6 cups of low sodium chicken broth
  • 4 chicken breast 
  • 1 green pepper
  • 1/4 of a purple onion 
  • 1/2 cup of frozen peas
  • 5 small -medium red potatoes ( can also use sweet potatoes) 
  • 4 carrots 
  • 1 1/2 Tbsp of garlic powder 
  • 1/8 tsp of cardamom
  • 1/4 tsp of turmeric
  • 2 bay leaves

Directions: 

  • Chop chicken into small cubes, set aside 
  • Chop all veg into small cubes or slices, set aside 
  • In your slow cooker add your broth and spices and mix ( except bay leaves) 
  • Add all of your ingredients and stir, place bay leaf on top 
  • If at home while cooking give it a stir here and there
  • You can either put your cooker on high if you want done in 2-3 hours or let it simmer on low while you are at work for the day or over night
  • Once done remove bay leaves
  • Even make a double batch and freeze for a later time 

Perfect hearty soup for a chilly evening or afternoon!
