Clean recipe for apple, feta, mint turkey meatballs in a kale tomato sauce on top of quinoa and fried mixed seed spinach with a garlic side hummus. Get ready for a lean and delicious meal!

Meatballs:

  • 1 pkg ground turkey
  • 1 Apple diced
  • 1/3 cup of light crumbled feta
  • 1/2 tbsp of clubhouse roasted cumin mint spice

Pre heat oven 350. Combine all ingredients and roll into equal balls, cook in a greased skillet till meat balls are cooked through.

Transfer to a small baking dish and cover in organic bello kale tomato sauce ( found at superstore in organic isle)  and coin for about 20 min

Quinoa:

Cook quinoa according to package

Hummus:

  • 1 can of chick peas drained
  • 2 tsp of cumin
  • 3 garlic cloves
  • 1 tbsp of olive oil
  • Juice from 1/2 a lemon
  • Pinch of salt to taste

Blend All ingredient until smooth

Fried mixed seed spinach:

In a skillet with 1 tbsp of olive oil fry up your choice of spinach with a hemp, chia, flax, and buckwheat seed mix add a pinch of salt and fry until spinach is at desired tenderness.

Plate:

Plate quinoa first then top with spinach and then meat balls and sauce, add a little hummus to the side for a bit of extra flavour! Enjoy this full flavour dinner!!!!
