Healthy recipe for garlic basil fried shrimp on top of Parmesan pea and corn quinoa. Topped with crunchy Buffalo chickpeas.

Chick peas:

Pre heat oven to 350

In a mixing bowl combine 1 can of rinsed chickpeas and toss with olive oil brown rice flour and franks red hot till coated!  Then place on a greased baking sheet and cook until crunchy golden brown which can take 30-40 min. Keep an eye on them. Meanwhile :

Shrimp:

  • 2 1/2 cups of shrimp
  • 6 basil leaves
  • 3 garlic cloves
  • 1 tbsp olive oil
  • 1 1/2 cup of peas
  • 1 cup of corn
  • 1 1/2 cup of cooked quinoa
  • Light Parmesan to taste
  • 3 tbsp of melted coconut oil

Mince garlic and basil and fry all ingredients together till shrimp has a little golden brown crust to it. Add in to frying pan, peas, corn, quinoa, coconut oil, and how ever much light Parmesan. Cook for about 15 min don't let burn or stick to pan. Add salt and pepper to taste.

Place on plate top with chickpeas, a dollop of light sour cream and fresh diced chives and enjoy!
